Fish in tomato and spring onion sauce with rice

A very easy to cook student dish: Fish in tomato and spring onion sauce with rice.
Use frozen Basa fillets which for a cheap alternative to more common white fish such as cod.
Ingredients
To make 1 serving
- 2/3 Basa fillets –much cheaper than cod/haddock
- Tin of chopped tomatoes
- Couple of spring onions
- Boil in the bag rice
- Salt and pepper
How to make fish in tomato and spring onion sauce :
- Place boil in the bag in a saucepan with boiling water for around 20 minutes (or time stated on box)
- Whilst rice is boiling, fry fish in a little oil until white all over and beginning to break apar.
- Once fish has been cooked through, empty tin of chopped tomatoes into the same pan and add a few chopped spring onions. Add salt and pepper as desired. Some fresh parsley also works well!
- Simmer for 5 minutes.
- Enjoy!
- Tip: Could also add chilli powder for added kick.
