  • Tinned tomatoes
  • Tin of coconut milk
  • Curry paste of choice
  • 1/2 aubergine
  • Tin of chickpeas
  • Onion
  • Sweet potato

How to make Aubergine, Sweet potato and Chickpea Curry

  1. Chop onion and soften in a pan with oil for 10 minutes
  2. Add chopped aubergine and sweet potato and fry for 10 minutes

  4. Add a table spoon of curry paste
  5. Add tinned tomotoes, & 1/2 a tin of coconut milk and chickpeas

  7. Leave on a low heat for 30 minutes
  8. If too spicy add more coconut, if too mild add more curry paste

  10. Serve with rice or veg
