Ingredients

To make 1 serving

  • Rice
  • 1/2 tin of coconut milk
  • Chicken breast 1
  • Veg to serve
  • Spice of choice

How to make Grilled Chicken and Coconut rice:

  1. Start by boiling the rice in the coconut milk for roughly 15 minutes or until the coconut milk has evaporated and the rice is cooked.
  2. Then flatten your chicken and rub with oil and a spice of choice such as paprika.
  3. Fry or grill chicken until cooked
  4. Serve with veg of choice, goes nicely with broccoli or asparagus
