Easy Chicken Fajita Pasta Recipe

A tasty Spicy Chicken Fajita Pasta recipe that makes for a delicious dinner.

You can use a packet fajita or taco seasoning for this recipe, or create your own home made seasoning with the recipe below.

These numbers will make for four to six good servings and take around 30 minutes.

Ingredients

To make 4 servings

  • 300g pasta
  • 1 Onion
  • 3 peppers
  • 2 large chicken breasts
  • 1 tablespoon tomato purée
  • 1 carton of passata (around 500g)Could swap for tinned tomatoes
  • Fajita SeasoningFrom a packet or see recipe below
  • Olive oil Or cooking spray
  • 2-3 tablespoons cream cheese (optional)
  • A bit of cheese to sprinkle on the top (optional)

How to make Chicken Fajita Pasta:

  1. If making your own seasoning, in a bowl combine 2 teaspoons of cumin, 2 teaspoons paprika, 2 teaspoons garlic powder, 1 teaspoon chilli powder, 1 teaspoon salt and 1 teaspoon pepper. Adjust the amounts to taste.
  2. Cut the chicken into bite-size pieces and drizzle with oil and a half of the seasoning. Mix to coat.
  3. Peel and slice up the onions and deseed and slice up the peppers. Drizzle with oil and coat with the remaining half of the seasoning.
  4. Fry the chicken over a high heat for a few minutes until browned all over. Remove and set aside.
  5. Add in the vegetables and cook for 5-10 minutes until softened.
  6. Stir through a tablespoon of tomato purée.
  7. Add in the tomato passata.
  8. Optionally stir in the cream cheese until melted.
  9. Add back the chicken and allow the mixture to simmer until chicken is fully cooked through.
  10. Meanwhile, cook the pasta per pack instructions.
  11. When it’s all cooked, drain the pasta and mix in the sauce and chicken mixture.
  12. Sprinkle some cheese on top to serve.
