Vegetarian Beany Bake student recipe

A vegetarian Beany Bake student recipe topped with cheese.

You could also top with some mashed potatoes to make for an easy veggie alternative to Shepard’s Pie.

Ingredients

To make 1 serving

  • Tin of kidney beans
  • Passata or tinned tomatoes
  • 1 tbsp tomato puree
  • A chopped onion
  • 2 handfuls of other vegeg chopped mushroom, pepper or courgette, sweetcorn, spinach, etc.
  • Mixed herbs
  • Grated cheese
  • 1tbsp oil or butter

How to make a student Beany Bake:

  1. Preheat the oven at 180 degrees
  2. Soften the chopped onion in oil/butter in a hot pan on the hob.
  3. Drain and rinse the kidney beans, and add them, and all other ingredients to the pan (aside from the cheese).
  4. Mix and simmer for 5 mins.
  5. Transfer the mixture to a casserole dish and top with grated cheese.
  6. Cook on the middle shelf of the oven for 20mins, or until cheese is bubbly and golden on top.
