Baked chicken and vegetable student meal

A random baked chicken dish packed full of veggies too with a crispy cheesy potato topping.
This a real homely student meal and will serve about 4-6 based on the amounts below
Ingredients
To make 1 serving
- 2 pieces of chicken breast
- 1 onion
- 2 cups of frozen veg
- 3 garlic cloves
- 3 medium sized potatoes
- Grated cheeseOptional
- Gravy granulesOptional
How to make baked chicken dish:
- Firstly you will need to cut up the chicken breasts into reasonable size chunks. Season with salt and pepper to taste then start to fry them until golden in a little oil over a medium heat.
- While the chicken is cooking, start to chop up your onion and crush the garlic cloves too.
- When that’s done add the onions, garlic and the frozen veg with a cup of water, let the chicken simmer for a while.
- Now its time to peel the potatoes then cut in nice thin slices. The chicken and veg should now be ready.
- If you have some gravy granules this would be a good time to add them just to make the sauce a bit thicker, no worries if you don’t!
- Finally place the chicken in an appropriate oven dish, lay the slices of potatoes across the whole dish. You now also add a few sprinkles of grated cheese if you wish.
- Now leave in the oven for 30-40minutes at 200 degrees.
