Baked Potato and Bacon Salad Recipe

Try this twist on a standard baked potato or potato salad by combing the two for a warm, baked potato and bacon salad.
You can eat this as a meal on its own or make it up as a tasty side for the summer BBQ.
This recipe and ingredient list will make for a good serving for 1-2 people or as a side for 4-6 people.
Ingredients
To make 1 serving
- 2 Spring onions
- 3 Bacon slices
- 10 tbsp sour creamAbout 200 ml
- 5 tbsp mayonnaise
- Grated cheeseOptional
- 2 Potatoes
How to make baked potato salad:
- Prick the potatoes with a fork and bake for 40-50 minutes. Alternatively microwave for 10 minutes, turning over after 5 minutes.
- Once the potatoes are cooked, let them cool while you mix the sour cream and mayo and season with pepper.
- Grate the cheese (if using), slice up the spring onions and and cook the bacon until crispy before cutting into bits.
- Once potatoes have cooled down a bit, slice in half and scoop out the flesh into a bowl.
- Add in the sour cream and mayo mix, together with approximately 3/4s of the cheese, bacon and spring onions, and mix it all together.
- Top with the remaining 1/4 of cheese, bacon and spring onions.
- Tuck in warm or eat cool!
