Basic Sponge Traybake

When it comes to baking there’s a particular joy that comes from creating something both simple and utterly delightful.
Our simple vanilla traybake recipe embodies this philosophy to a T, inspired by Mary Berry’s own classic recipe.
With just a few basic ingredients and minimal fuss, you can whip up a delectable treat that’s sure to become a staple.
For this recipe you’ll need a big mixing bowl and a 30 x 23 cm (12 x 9 inch) cake tin.
Ingredients
To make 20 servings
- 225g softened butter
- 225g caster sugar
- 275g self-raising flour
- 2 level teaspoons of baking powder
- 4 eggs
- 3 tablespoons of milkOptional, for best results
How to make a simple vanilla try bake
- Pre-heat the oven to 180°C (fan 160°C / Gas Mark 4). Grease a 30 x 23 cm (12 x 9 inch) traybake or roasting tin then line the base with baking paper.
- Measure all the ingredients into a large bowl and mix with a wooden spoon until well blended.
- Pour the mixture into the prepared tin and level the top.
- Bake in the pre-heated oven for about 35-40 minutes, or until the cake has shrunk from the sides of the tin and springs back when pressed in the centre with your fingertips.
- Leave to cool in the tin before serving.
Once cooled, you can then decorate your sponge tray bake with icing or butter cream frosting.
