Our simple vanilla traybake recipe embodies this philosophy to a T, inspired by Mary Berry’s own classic recipe.

With just a few basic ingredients and minimal fuss, you can whip up a delectable treat that’s sure to become a staple.

For this recipe you’ll need a big mixing bowl and a 30 x 23 cm (12 x 9 inch) cake tin.

Ingredients

To make 20 servings

  • 225g softened butter
  • 225g caster sugar
  • 275g self-raising flour
  • 2 level teaspoons of baking powder
  • 4 eggs
  • 3 tablespoons of milkOptional, for best results

How to make a simple vanilla try bake

  1. Pre-heat the oven to 180°C (fan 160°C / Gas Mark 4). Grease a 30 x 23 cm (12 x 9 inch) traybake or roasting tin then line the base with baking paper.
  2. Measure all the ingredients into a large bowl and mix with a wooden spoon until well blended.
  3. Pour the mixture into the prepared tin and level the top.

  4. Bake in the pre-heated oven for about 35-40 minutes, or until the cake has shrunk from the sides of the tin and springs back when pressed in the centre with your fingertips.
  5. Leave to cool in the tin before serving.

Once cooled, you can then decorate your sponge tray bake with icing or butter cream frosting.
