Cauliflower Cheese student recipe

Cauliflower Cheese is a great tasty student recipe and is real easy to make.

Cauliflower Cheese can make for either a yummy vegetarian main or a side dish as part of a bigger meal for special occasions.

It’s often a classic meal in secondary school Food Technology classes proving just how simple it is.

You can also easily customise the basic Cauliflower Cheese recipe by adding or substituting other veg such as broccoli or adding things like cooked bacon, ham and chicken if you really can’t do without meat.

Ingredients

To make 1 serving

  • 1 Cauliflower
  • 400ml milk
  • 50g Butter
  • 50g flour
  • Grated cheese

How to make classic Cauliflower Cheese:

  1. Roughly chop up the cauliflower into handful sized florets. You can also use frozen prepared cauliflower
  2. In a pan of salted boiling water, cook the cauliflower through until soft and tender. It should take around 8-10 minutes from fresh but slightly longer if cooking from frozen.
  3. Drain and place the cauliflower in a baking dish.
  4. Return the pan to a medium heat and melt the butter.
  5. Stir in the flour until you form a thick-ish paste.
  6. Stir in the milk bit by bit. You can add more or less for a thicker/runnier sauce depending on your tastes.
  7. Keep stirring until everything has combined into a smooth sauce.
  8. Stir in handfuls of grated cheese. Again, you can add more or less to taste. Two good handfuls is nice starting point.
  9. Once the cheese has fully melted in, pour the sauce over the cauliflower in the dish.
  10. Top with another handful of grated cheese.
  11. Grill until the top is browned and crispy.
