Cheesey potato egg scramble breakfast recipe

A ten minute breakfast meal that’s sure to keep you full until lunch time.

This one pan cheesey potato egg scramble can easily have meat (e.g. cooked bacon and ham) plus more veg added (e.g. onions, peppers).

The ingredients below will make for one big serving.


To make 1 serving

  • Potato 1
  • Egg 2
  • Grated Cheese
  • Oil 1 tbsp

How to make cheesey potato egg scramble :

  1. Prick the potato with a fork and microwave for 5 minutes, turning over half way through
  2. Once cooked, carefully cut up into rough cubes/chunks.
  3. Heat the oil over a medium heat and add in the potato.
  4. Crack over the eggs and scramble/stir.
  5. Add in the cheese plus any meat and/or other veg you’re using.
  6. Mix it altogether as you cook for another 5 or so minutes before serving.
