Baked Crispy Cheesy Chicken Recipe

Make your chicken a little bit more interesting with this crispy cheesy cheddar coating.
These delicious baked crispy cheese chicken breasts make for a delicious simple meal. Optionally serve with some roasted veg, rice, potatoes and/or a salad.
You can use any type of breadcrumbs for this recipe – e.g. white/golden/panko – or even blend up some Ritz Crackers to use in place.
The ingredients below will be enough for the two chicken breasts.

To make 2 servings
- 2 Chicken Breasts
- 1 egg, beaten
- 1 tablespoon plain flour (optional)
- 2 knobs of butter
- Handful of grated cheese
- Salt and pepper
How to make Crispy Cheesy Chicken:
- Pre-heat oven to 180-200 degrees
- Dry the chicken using a paper kitchen towel.
- Season well with pepper and a little salt.
- Break and beat one egg in one bowl and in another combine the breadcrumbs with the grated cheese.
- For best results, coat each of the chicken breasts in some plain flour. This step can be skipped if you don’t have any flour to hand.
- Dip the chicken breasts first in the beaten egg and then in the breadcrumbs and cheese mixture. Shake off any excess at each step.
- Carefully place the chicken pieces onto a sheet of baking paper on a tray.
- Top each piece of chicken with a knob of butter
- Cook for around 30 minutes or until chicken is thoroughly done and coating is crispy and golden
