Colourful chorizo casserole recipe: This spicy, vegetable packed dish is the ultimate comfort food and it only takes around 15 minutes to make.
If you don’t usually cook with chorizo, give it a try! Its lovely smoky flavour really livens up a dish and a little can go a long way.
Try adding sweet corn, peppers and peas to boost the colour and smash your 5-a-day!
Ingredients
To make 1 serving
- 1 onion, diced
- 1-2 peppers, diced
- Any vegetables of your choice (peas, sweet corn and spinach make a tasty addition)
- A tin of chopped tomatoes
- 1 tsp of chilli flakes
- ½ a chorizo sausage ring, sliced into discs
- 1 vegetable/chicken stock cube
How to make colourful chorizo casserole:
- Start by frying the onion for a couple of minutes until it begins to soften.
- Add the chorizo and fry for a couple of minutes until the lovely golden juice is colouring the pan.
- Add the peppers and chilli flakes and stir fry for a couple of minutes.
- Make up a little stock by pouring ½ pint of hot water over the stock cube. Add the tinned tomatoes and the stock and bring to the boil.
- After a couple of minutes, reduce and allow to simmer for 10 minutes.
- Serve with crusty bread and enjoy.
