Colourful chorizo casserole recipe: This spicy, vegetable packed dish is the ultimate comfort food and it only takes around 15 minutes to make.

If you don’t usually cook with chorizo, give it a try! Its lovely smoky flavour really livens up a dish and a little can go a long way.

Try adding sweet corn, peppers and peas to boost the colour and smash your 5-a-day!


To make 1 serving

  • 1 onion, diced
  • 1-2 peppers, diced
  • Any vegetables of your choice (peas, sweet corn and spinach make a tasty addition)
  • A tin of chopped tomatoes
  • 1 tsp of chilli flakes
  • ½ a chorizo sausage ring, sliced into discs
  • 1 vegetable/chicken stock cube

  1. Start by frying the onion for a couple of minutes until it begins to soften.

  3. Add the chorizo and fry for a couple of minutes until the lovely golden juice is colouring the pan.
  4. Add the peppers and chilli flakes and stir fry for a couple of minutes.
  5. Make up a little stock by pouring ½ pint of hot water over the stock cube. Add the tinned tomatoes and the stock and bring to the boil.
  6. After a couple of minutes, reduce and allow to simmer for 10 minutes.

  8. Serve with crusty bread and enjoy.
