Easy Sausage & Bean Hotpot Recipe

This sausage and bean hotpot recipe is the ultimate comfort food dish.
Also known as a ‘cowboy hotpot’ this recipe makes for a cheaper and quicker version of the classic Lancashire hotpot.
Using sausages and some basic tinned ingredients, this recipe will take around an hour and feed 4-6 people.
Ingredients
To make 4 servings
- 2 large potatoes, peeled and thinly sliced
- 6-8 sausages
- 1 large onion
- 2 tins baked beansOr other beans in tomato sauce
- 1 red pepper
- 1 tin sweetcorn, drainedCould swap for other tinned veg, e.g. peas
- 1 tin green beans, drainedOr fresh
- 1 teaspoon tomato puree
- 1 teaspoon paprika
- Salt, pepper and other seasoning to tasteE.g. a pinch of brown sugar or a splash of Worcestershire sauce
How to make easy ‘cowboy’ sausage and bean hotpot:
- Heat a little oil in a large frying pan over a medium heat.
- Cook the sausages in the pan for around 10 minutes until sausages are browned all over. Remove and set aside.
- In the now empty pan add the chopped onion an cook for a few minutes until translucent.
- Add in the paprika and stir for 30 seconds.
- Add in the peppers and fry until softened – about 4-5 minutes.
- Stir through the tomato purée for 30 seconds.
- Add in the tins of beans, green beans and sweetcorn.
- Cut up the sausages into bite-size pieces and add them back to the pan.
- Mix well and season. You could add a pinch of brown sugar, a splash of Worcestershire sauce, or even some Marmite. Allow to simmer.
- Meanwhile, pre-heat the oven to 180 degrees. Peel and cut up the potatoes into thin slices.
- Spoon the sausage & bean mixture into a large baking dish and top with the sliced potatoes. Season with salt and pepper and brush or spray with a little oil, or melted butter.
- Bake until the potatoes are golden and crispy – around 30-40 minutes.
