Fried Eggs In Peppers Recipe

A quick and unique student eat that’s good for breakfast or as a snack at time of day!
Eat either alone or top with some grated cheese or chopped fried bacon!
This recipe shouldn’t take more than 10 minutes.
Ingredients
To make 1 serving
- PeppersAny colour
- Eggs
- OilOr butter or spray, for frying
- Additional toppingsE.g. Bacon, Cheese
How to make fried eggs in pepper:
- Lay the pepper(s) onto their side and cut into slices to create rings.
- Remove any remnants of the seeds and stalk in the middle.
- Add a little oil over a low-medium heat and fry the rings for 5 or so minutes on one side only until they begin to brown.
- Flip the rings and crack in an egg into the centre.
- Leave alone for about a minute to allow the bottom to set.
- Add a little water to the pan and cover. Allow to cook for 3 minutes.
- Check the white is set and, if not, keep cooking for a further 30 seconds to a minute.
- Lift off onto a plate, season with salt and pepper to taste and add any toppings such as fried bacon and grated cheese.
