To make 1 serving

  • 1 large banana (ripe) - to quickly ripen puncture the skin of the banana and place in the microwave for 30 secs
  • 2 medium size eggs

How to make Gluten free Banana Pancakes:

  1. Mash the banana to a pulp consistency with a fork and beat the two eggs
  2. Heat some butter or oil in a medium sized frying pan on a medium to high heat
  3. Spoon your mixture into the pan (tablespoon will do)
  4. Flip when solid
  5. Makes about 6
