Ingredients
To make 1 serving
- Rice
- 1/2 tin of coconut milk
- Chicken breast 1
- Veg to serve
- Spice of choice
How to make Grilled Chicken and Coconut rice:
- Start by boiling the rice in the coconut milk for roughly 15 minutes or until the coconut milk has evaporated and the rice is cooked.
- Then flatten your chicken and rub with oil and a spice of choice such as paprika.
- Fry or grill chicken until cooked
- Serve with veg of choice, goes nicely with broccoli or asparagus
