Nice n Spicy Curry student recipe

A very simple nice n spicy student curry recipe using any meat, fish or even veg.
Chicken is used here but you could make it a veggie curry with vegetables such as cauliflower, sugar snap peas or sweet potato…experiment and make it your own
This recipe takes 30 minutes and comfortably feeds about 4 people (depending on how much meat you use), it can be portioned and frozen once it has cooled.
Ingredients
To make 1 serving
- 2 tablespoons lemon juice
- 1 Packet of chopped fresh tomatoes
- A splash of any oil
- Finely sliced fresh chilies
- 1 finely diced onion
- Half a teaspoon of ground black pepper
- 2 cloves of garlic, finely diced
- 1 tablespoon ground cumin
- 1 heaped teaspoon ground turmeric
- 2 teaspoons grated ginger (try to use fresh but you can use ground if you can't get it)
- 500 ml of water
- 4 tablespoons natural yogurt (optional)
How to make a Nice n Spicy Curry:
- Fry off the onions in a splash of oil for a couple of minutes then add the ginger, garlic and chilies, don’t let it burn
- When the onions are soft add any hard veg (is using)
- Thrown in all of the ground spices and stir, don’t let the spices stick to the pan or they will burn, if they start to stick add a splash of water
- Add all of the chopped tomatoes, when they hit the heat they will start to release their juice
- Once the tomatoes have started to soften add your water, it will look really watery now but it will thicken
- Add your meat (if using) you can use leftover meat for this recipe
- Let the curry simmer until the meat is cooked and it has reached the desired thickness, if it looks too dry add a little more water
- If you are using natural yogurt add it now, this will help to thicken the curry slightly and give it a slightly creamier taste
- Cook for another 5 – 10 minutes
- Serve with poppadoms, naan and rice
