Ratatouille and grilled halloumi student meal

Make your own simple homemade ratatouille and serve with grilled halloumi for a tasty student meal.
Ingredients
To make 1 serving
- 1/2 onion
- 1/2 pepper
- 1/2 aubergine
- Garlic
- 1/2 tin tomatoes
- Mushrooms
- Halloumi
How to make Ratatouille with grilled halloumi:
- Chop and fry the onions in oil until soft
- Chop all the other veg and add to pan and leave to fry for 20 minutes
- Add garlic and fry for further 5 minutes
- Add tinned tomatoes and simmer
- Meanwhile grill/fry halloumi for a few minutes on each side or until golden brown
- Serve all together with veg or salad
