Roasted chorizo potatoes recipe

This impressive but easy one tray meal has a bit of everything and requires minimal preparation
Ingredients
To make 4 servings
- Potato 2
- Peppers 2
- Onion 1
- Chorizo sausage 1
- Olive oil 1 tsp
- Paprika 1 tsp
How to make roasted chorizo potatoes:
- Wash and dice up the potatoes – leave the skin on if you wish
- In a bowl, mix the potatoes with a teaspoon or two of paprika and set aside
- Cut up the peppers into large-ish square chunks and chop up the onion
- Slice up the chorizo.
- Bang everything in a foil lined baking tray and drizzle with a little olive oil.
- Roast in the oven at 200 degrees (180 for fan ovens) for 30-35 minutes.
- Serves 3-4
