Ingredients

To make 1 serving

  • 2-3 Eggs
  • 1 tbsp Salsa
  • Handful of Grated cheese
  • 1 tsp Butter
  • Salt & pepper

How to make salsa scrambled eggs:

  1. Melt a teaspoon of butter or oil in a pan over a medium-low heat.
  2. In a bowl, crack in 2-3 eggs and beat well with a fork. Season with salt and pepper
  3. Pour the egg mixture into the pan and continuously scramble it with a spatula or wooden spoon.
  4. Once little to no liquid is left but the eggs are still wet, remove from the heat.
  5. Continue to stir and add in the cheese, continuously fold everything together.
  6. Plate and top with the salsa. Alternatively, mix the salsa in with the eggs together with the cheese.
  7. Optionally serve on toast or with crispy bacon and avocado.
