Sausage and bacon stuffed peppers recipe

Make this easy and yummy stuffed peppers recipe with cous cous, bacon and sausage.
Ingredients
To make 1 serving
- Sausages (I use chipolatas, but any will do)
- Bacon lardons (or just bacon cut up)
- Cous cous (ready flavoured packet, I use a Mediterranean type flavour)
- Pine nuts
- 1 or 2 cloves of garlic (depending on how garlicky you like it)
- A couple of sundried tomatoes
- Grated cheese
How to make Stuffed peppers:
- Prepare peppers by cutting in half from top to bottom and scooping out middle with seeds
- Microwave the peppers for about 5 minutes on a medium setting until soft
- Cut sausages and bacon into little chunks
- Fry sausages until almost cooked, then add bacon, chopped onions and garlic to pan, cook for a further few minutes
- Prepare cous cous by adding boiling water and covering up for about 5 mins or until all water absorbed
- Cut up sundried tomatoes into small pieces
- Combine pine nuts, tomatoes, and fried mixture together and mix well
- Spoon mixture into peppers and grate a little cheese on top
- Cook in oven at 180 degrees/350F/gas 4 until cheese is a melted
