Ingredients

To make 4 servings

  • 16 pork sausagesFresh or frozen
  • 1 kg potatoes, peeled and chopped
  • 50g butter
  • 100ml milk
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 2 large onions, thinly sliced
  • 2 cloves garlic, minced
  • 2 tablespoons plain flour
  • 500 ml beef stock
  • 1 teaspoon Worcestershire sauce
  • 100g grated cheddar cheese

How to make Sausage and Mash Lasagna

Prepare the Sausages

  1. Preheat your oven to 180°C (160°C fan assisted).
  2. In a frying pan, brown the sausages in 1 tablespoon of olive oil over medium heat until they are evenly browned on all sides.
  3. You can also use frozen sausages, in which case cook them per pack instructions or in an air fryer.
  4. Transfer to a plate and slice each sausage into thirds.

Make the Mash

  1. Place the chopped potatoes in a large pot of salted water. Bring to a boil and cook until tender, about 15-20 minutes.
  2. Drain the potatoes and return them to the pot. Add the butter and milk, then mash until smooth. Season with salt and pepper to taste. Set aside.

Cook the Onion Gravy

  1. Using the same pan used for sausages, add another tablespoon of olive oil and cook the onions and garlic over low heat until soft and caramelized, about 15 minutes.
  2. Stir in the flour and cook for a minute. Gradually add the beef stock and Worcestershire sauce, stirring continuously, until the sauce thickens. Season with salt and pepper.

Layer the Lasagna

  1. In a large ovenproof dish, layer half of the sliced sausages. Cover with half of the mashed potatoes, spreading evenly.
  2. Pour half of the onion gravy over the mash. Repeat the layers once more, ending with a layer of onion gravy on top.

Bake the Lasagna

  1. Sprinkle the grated cheese over the top layer of gravy.
  2. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbling and golden brown.

Serve

  1. Let the lasagna sit for a few minutes before serving. This dish pairs beautifully with a crisp green salad or steamed vegetables.

You can adjust the amount of gravy to your preference. Some like their lasagna with more sauce, while others prefer it a bit drier. Also, consider using your favourite type of sausages to make this dish uniquely yours.
