Vegetables in Pesto Sauce

A super easy and simple vegetable dish that can be eaten on its own or as a side.
Vegetables of your choice such as mushrooms and courgette, vegetable (or other) stock cube, Pesto (in a jar)
Ingredients
To make 1 serving
- Vegetables of your choice such as mushrooms and courgette
- Vegetable (or other) stock cube,
- Pesto (in a jar)
How to make Vegetables in Pesto Sauce:
- Cook the chopped vegetables in enough stock to cover them, for about 10 minutes until soft.
- Make sure there is only a small amount of liquid in the pot with them when you add in a big spoon of pesto and stir. This makes a nice creamy style sauce.
- Eat as a soup, stew, or accompaniment with meat.
