Vegetarian Beany Bake student recipe

A vegetarian Beany Bake student recipe topped with cheese.
You could also top with some mashed potatoes to make for an easy veggie alternative to Shepard’s Pie.
Ingredients
To make 1 serving
- Tin of kidney beans
- Passata or tinned tomatoes
- 1 tbsp tomato puree
- A chopped onion
- 2 handfuls of other vegeg chopped mushroom, pepper or courgette, sweetcorn, spinach, etc.
- Mixed herbs
- Grated cheese
- 1tbsp oil or butter
How to make a student Beany Bake:
- Preheat the oven at 180 degrees
- Soften the chopped onion in oil/butter in a hot pan on the hob.
- Drain and rinse the kidney beans, and add them, and all other ingredients to the pan (aside from the cheese).
- Mix and simmer for 5 mins.
- Transfer the mixture to a casserole dish and top with grated cheese.
- Cook on the middle shelf of the oven for 20mins, or until cheese is bubbly and golden on top.
