Vegetarian Egg and Salsa Breakfast Quesadilla Recipe

A breakfast spin on some classic Mexican street food: Try this egg and salsa quesadilla when you next wake up!
This quick and easy recipe takes little more than 10 minutes for the single serving.
Ingredients
To make 1 serving
- 2 Eggs
- 2 Tbsp Salsa
- Cheese
- 1 Wrap
- 1 Tsp MilkOr sour cream
How to make vegetarian egg and salsa breakfast quesadilla:
- Whisk together two eggs in a bowl or mug, adding a splash of milk or sour cream if you’ve got it, and heat some oil in a frying pan.
- Pour the egg mixture into the pan and scramble it with a fork or other utensil – keep it moving, you don’t want it setting into an omelette! Season well to taste.
- Add in the salsa and mix it all about to get a pale red egg mixture. Remove from the heat and place onto one side of the wrap and cover with the grated cheese.
- Fold the other side of the wrap over to form a half-moon shape and return to the frying pan, cooking each side until crispy and golden
- Cut into wedges to serve
