Vegetarian Stroganoff student recipe

Vegetarian Stroganoff

Inspired by Eastern European cuisine, this vegetarian stroganoff makes for a great lunch alternative or a light supper.


To make 1 serving

  • Sour cream 500
  • Worcester sauce 5 tbsps(some grocery shops sell anchovy-free versions; or as an alternative use vegetable stock cubes)
  • Onions
  • Mushrooms
  • Peppers
  • Gnocchi

How to make Vegetarian Stroganoff:

  1. Slice the onions, mushrooms and peppers
  2. Mix together the sour cream and Worcester sauce or vegetable stock cubes and bake the onions and mushrooms for 5 minutes
  3. Add the gnocchi and peppers
  4. Stir together and cook for 10 minutes
  5. Garnish with some parsley (if you feel so inclined) and ready to serve!
