Yummy Cheese and Onion Mash recipe

A tasty vegetarian side dish that makes bland mashed potatoes a bit more interesting.
Ingredients
To make 1 serving
- Potatoes 4
- Milk 75 ml
- Butter 1 tbsp
- Cheese 2 inch block
- Onions 2
Directions:
- Peel and chop the potatoes then add the chopped potatoes to boiling water in a pan until well done, for approx 20-25 minutes
- Drain and empty the potatoes into a large suitable bowl. Then mash the potatoes together with a masher. Mash in milk and butter into the potatoes.
- Grate the cheese and fold into potato mixture, little bits at a time.
- In a frying pan heat a little bit of olive oil and fry the onions until golden brown. (approx 7 mins)
- Add to the mash mixture straight from the pan.
- Mix in salt, lots of pepper and then spoon into an ovenproof dish. Flatten with a fork/spoon.
- Sprinkle a small amount cheese on top of the flattened mash in the dish.
- Place in a pre-heated oven for 10-15 mins at Gas mark 6, Depending on how well you want it cooked.
Once cooked serve on a plate, goes well with a nice piece of crispy chicken, Although can go with almost anything that you like.
