- 1 large banana (ripe) - to quickly ripen puncture the skin of the banana and place in the microwave for 30 secs
- 2 medium size eggs

- Mash the banana to a pulp consistency with a fork and beat the two eggs
- Heat some butter or oil in a medium sized frying pan on a medium to high heat
- Spoon your mixture into the pan (tablespoon will do)
