A lazy twist on the classic Eggs Benedict recipe that makes it so much easier and quicker!

This scrambled Eggs Benedict recipe for students can be cooked up in just 5 minutes.

Ingredients

To make 1 serving

  • Muffin 1
  • Slices of hamCan also use ham, salmon, etc.
  • Butter 1 tsp
  • Eggs 2
  • Hollandaise sauce 2 tsps

How to make Scrambled Eggs Benedict:

  1. Slice the muffin into two and toast the halves.
  2. Meanwhile, heat a knob of butter in a frying pan over a high heat.
  3. Crack in the eggs into the frying pan and scramble together. Fold continuously for a few minutes until cooked.
  4. Butter the muffins, top with the ham then the scrambled eggs.
  5. Top each half with a teaspoon of hollandaise sauce.
