The recipe below will make for 6-8 small cheesecakes.
- 125g digestive biscuits
- 250g mascarpone
- 35 icing sugar
- 25ml double cream
- 2 tbps strawberry jam
- 100g strawberries
How to make no-bake 5 Minute Strawberry Cheesecakes:
- For the base, crunch up the digestives. The best way is to place them into a sandwich bag and punch them – great for de-stressing!
- For the cheese layer, mix together 250g of mascarpone, 35g of icing sugar and 25ml of double cream. Stir until smooth and creamy.
- Finally, for the strawberry layer, stir two tablespoons of strawberry jam to loosen it. Mix in around 100g of chopped and stemmed strawberries.
- When ready to serve, layer the crushed biscuits followed by the cream cheese and finally the strawberry topping.
