Orange mini cupcakes!

Add a tangy and fruity twist to your standard cupcakes with these rich, orange flavoured mini cupcakes!


  • 110g butter or margarine, at room temperature
  • 110g caster sugar
  • 2 eggs, beaten
  • 1 tsp vanilla extract
  • 110g self raising flour
  • 1-2 tbsp milk
  • 75g butter, at room temperature
  • 175g icing sugar
  • Juice of 1 orange
  • Zest of 2 oranges

How to make Orange mini cupcakes:

  1. Preheat oven to 180 degrees/350F/gas 4 and place mini cupcake cases in on a baking tray
  2. Mix the softened butter and caster sugar together until light and creamy in texture
  3. Beat in eggs a little at a time, then add vanilla
  4. Fold in flour a little at a time
  5. Add a few drops of milk if mixture is too thick
  6. Bake in oven for about 10 minutes, check if cooked by lightly touching the top and if it springs back it’s done
  7. Leave to cool on a cooling rack, you can make the icing whilst waiting
  8. Combine softened butter with icing sugar and mix well with a spoon or electric whisk
  9. Mix in the zest of one orange and a spoonful of juice at a time, don’t make the icing too runny
  10. Add a small amount of zest from the second orange on top for decoration
