Simple Bean and Rice Vegan Burritos Recipe

Vegetarian food needn’t be bland salads! These bean and rice burritos are a great easy one-pot meal.

They also make for a great vegan recipe if you drop the grated cheese (or use vegan alternatives).

The ingredients for the recipe below will make for a good four burritos which you can finish off with your personal favourite burrito toppings such as, guacamole, etc.

You can pick up packs of taco seasoning from most supermarkets or make your own to taste with a mix of herbs like this one.

Ingredients

To make 4 servings

  • 1 large packet microwave/quick cook rice
  • 1 onion
  • 1 packet taco seasoning
  • Mixed mexican beans, drained400g tin
  • 1 tin sweetcorn, drainedOr frozen
  • 3 Tomatoes, chopped
  • 4 Tortilla wraps
  • Lettue, guacamole, sour cream, grated cheese (Optional)To serve

How to make these Vegan Bean and Rice Burritos:

  1. Peel and roughly dice the onion.
  2. Heat a little olive oil over a medium heat in a large frying pan.
  3. Add in the onion and half the taco seasoning. Fry for 5 minutes.
  4. Add in the mixed Mexican beans, tomatoes (chopped up) and sweetcorn and mix well.
  5. Add in 3 tablespoons of water and mix again, bring to a boil.
  6. Add in the quick cook (microwave) rice and mix together. Stir in the remaining taco seasoning.
  7. Cook until the rice has adsorbed all the water and has softened.
  8. Spoon the mix down tortillas and top with your choice of toppings: For example, guacamole, salsa, sour cream (non-vegan), cheese (non-vegan) to taste.
  9. Roll up burrito style and enjoy!
