Ratatouille and grilled halloumi

Make your own simple homemade ratatouille and serve with grilled halloumi for a tasty student meal.

Ingredients

To make 1 serving

  • 1/2 onion
  • 1/2 pepper
  • 1/2 aubergine
  • Garlic
  • 1/2 tin tomatoes
  • Mushrooms
  • Halloumi

How to make Ratatouille with grilled halloumi:

  1. Chop and fry the onions in oil until soft
  2. Chop all the other veg and add to pan and leave to fry for 20 minutes
  3. Add garlic and fry for further 5 minutes
  4. Add tinned tomatoes and simmer
  5. Meanwhile grill/fry halloumi for a few minutes on each side or until golden brown
  6. Serve all together with veg or salad
