Roasted chorizo potatoes recipe

This impressive but easy one tray meal has a bit of everything and requires minimal preparation

Ingredients

To make 4 servings

  • Potato 2
  • Peppers 2
  • Onion 1
  • Chorizo sausage 1
  • Olive oil 1 tsp
  • Paprika 1 tsp

How to make roasted chorizo potatoes:

  1. Wash and dice up the potatoes – leave the skin on if you wish
  2. In a bowl, mix the potatoes with a teaspoon or two of paprika and set aside
  3. Cut up the peppers into large-ish square chunks and chop up the onion
  4. Slice up the chorizo.
  5. Bang everything in a foil lined baking tray and drizzle with a little olive oil.
  6. Roast in the oven at 200 degrees (180 for fan ovens) for 30-35 minutes.
  7. Serves 3-4
