Stuffed Turkey and Avocado bagels recipe - 1

A very tasty and easy to make filling for a bagel (or any sandwich): Turkey and avocado!

If you have leftover turkey (or chicken) this will take just minutes. If not, follow the instructions below to cook from scratch.

The numbers below will make for two servings.

Ingredients

To make 2 servings

  • 2 bagels
  • 2 turkey steaksOr 1 chicken breast or leftover chicken/turkey
  • 1 Avocado
  • 2 tablespoons mayo
  • 1 tomato
  • Salt and pepper
  • Garlic powder and paprika (Optional)

How to make Stuffed Turkey and Avocado Bagels:

  1. If you’re using chicken breast instead of turkey steaks, cut the chicken breast in half length ways and flatten each half with either a meat mallet or rolling pin to around 1/2cm to 1cm thick.
  2. Season the meat with a good pinch of of salt and pepper and optionally garlic and paprika or other seasoning to taste.
  3. Pan fry in a little oil or cooking spray for a few minutes on either side until fully cooked through.
  4. Meanwhile, slice the bagels in half and spread over a tablespoon (or more) of mayo
  5. Peel and slice the avocado in two, removing the stone. Cut each half into slices.
  6. Slice up the tomato
  7. Once meat is cooked, allow to cool slightly before slicing.
  8. Pile the chicken or turkey onto the bagel and top with the avocado and tomato. Optionally season with a little pepper.
  9. Add back the top half of the bagel and enjoy!
