At its most basic you just need chocolate and cornflakes but the extra ingredients below will make for the best chocolate cornflake cakes.

The numbers below provide a rough guide to make around 12 cupcakes (depending on size) but you don’t need to worry about being too specific with the numbers.

Ingredients

To make 12 servings

  • 100g corn flakes
  • 200g chocolateMilk or dark
  • 50g butter (Optional)Can leave out
  • 1 tablespoon golden syrup (Optional)Could use honey or leave out
  • Handful of glacĂ© cherries (Optional)Could swap for dried fruit e.g. sultanas

How to make chocolate cornflake cakes:

  1. Break the chocolate into a bowl and add in the butter and syrup (if using).
  2. Melt either in a sauce pan over a low heat, stirring regularly. Alternatively, melt in the microwave by heating in 30 second blasts and stirring in-between. It shouldn’t take more than 1 and a half minutes with most microwaves.
  3. Add in cornflakes about a handful at a time until coated, continue adding cornflakes until all chocolate has been used up to coat them.

  5. Fold in the cherries. You could also add or substitute for other dried fruit such as sultanas.
  6. EITHER: Spoon into cup cake cases or pour the whole mixture into a tin or tray.
  7. Place in the fridge and leave to set, for about 20-30 minutes.
  8. If you’ve made the tray version, cut/break up into smaller pieces once set!
