Super Quick Vegetable Frittata Recipe

If you’re trying to avoid the dreaded ‘fresher five’ and you want to pay a little extra attention to what you’re eating, this is an ideal recipe to keep on the cards.

Packed with protein and veg, this is filling, nutritious and tastes great too. Even better – you can make up a huge batch and slice it up – to enjoy whenever hunger strikes.

The numbers below will make for 2-4 servings depending on how hungry you are.

Ingredients

To make 4 servings

  • 4 Eggs
  • 1 small Onion
  • 2 Peppers
  • Other vegE.g. spinach, mushrooms
  • Grated cheese
  • Salt & pepper

How to make veggie frittata:

  1. In a shallow oven-proof pan or skillet, fry the finely chopped onion, and a mix of veggies – you can use anything you fancy, from sliced bell peppers, spinach, mushrooms, courgette, etc.
  2. You can even use frozen veg if that’s all you have to hand. Cook through until there is no moisture visible – it shouldn’t look watery, particularly if you’ve used frozen vegetables.
  3. In a big bowl, mix up 3-4 large eggs with a handful of grated cheese and seasoning, and pour the egg mixture over the vegetables.
  4. Don’t stir – cook on a low heat until the base of the egg starts to look a little firmer.
  5. Then place under a grill or oven for 10-15 minutes until the eggs are cooked through.
  6. Slice up and serve.
