Ingredients

To make 1 serving

  • Cucumber
  • Sundried tomatoes
  • Quinoa
  • Chicken
  • Salt and pepper
  • Kale
  • Lemon juice (Optional)

How to make Quinoa and Kale chicken salad lunch:

  1. Bring a pan of water to boil and put in 1 cup of quinoa for 15 minutes – until fluffy
  2. Heat a pan of oil and cook the chicken for 10 minutes
  3. Dice cucumbers and sundried tomato
  4. Mix quinoa, cucumbers, tomatoes and chicken in a bowl
  5. Season with salt, pepper and lemon juice!
