Student Chicken Casserole for one recipe

A yummy Chicken Casserole for one recipe for students.


To make 1 serving

  • Frozen roast potatoesOr make your own!
  • Chicken breast 1
  • Small onion 1
  • Small carrots 2
  • Small broccoli 1
  • Chicken stock
  • SeasoningThyme, parsley and rosemary, 1 bay leaf


  1. Preheat oven at 180 degrees
  2. Fry the chicken breast for 3 minutes on each side
  3. Chop the carrots and onion and add them to the chicken for an additional 45 seconds
  4. Place chicken breast, carrots and onions into a small casserole dish
  5. Add chicken stock to 200ml of water along with a sprinkle of thyme, parsley and rosemary (or mixed herbs if preferred)
  6. Pour chicken stock mix into casserole dish
  7. Place 1 bay leaf on top of the chicken
  8. Put a hand full of frozen potatoes on a tray – or make your own crispy roast potatoes
  9. Place both frozen potatoes and casserole dish in oven for 40 minutes
  10. 10 minutes before the casserole is ready chop some broccoli and place it in boiling water on a hob
  11. Everything should be fully cooked at the same time
  12. Enjoy
